Strawberry Cheesecake


Biscuite Base
125g sweet biscuits, crushed
60g butter or cooking margarine, melted

Combine biscuit crumb and melted butter. Using the back of the spoon, press into a 22cm springform pan. Refrigerate until chilled

Filling
250g cream cheese
20ml (1 tablespoon) lemon juice
375g (1½ cups) fresh strawberries
110g (½ cup) sugar
125ml (½ cup) evaporated milk
4 teaspoons Halal gelatin
125ml (½ cup) hot water
125ml (½ cup) whipped cream
1 egg white, beaten until stiff
125g (½ cup) strawberries, extra
 

Instructions

  • Soften cream cheese by beating with a mixer, Add lemon juice.
  • Hull and slice strawberries, sprinkle sugar on top of it,
  • Beat evaporated milk until thick.
  • Add Halal gelatin to the hot water and stir briskly until dissolved
  • Allow to cool and add to a little of the beaten milk, blending thoroughly.
  • Add this mixture to the remainder of the beaten milk.
  • Add the remaining ingredients.
  • When thickening but not set, spoon on to the biscuit base.
  • Refrigerate until firm and decorate with extra strawberries.
 Serve : 8 to 10.
